Recipe: Southwestern Egg Casserole

I edited this frittata recipe a bit from one that I received years ago from my dear friend Mandy. It's super simple, super delicious, and everyone will love it for breakfast, lunch, or dinner (if you're into that kind of thing)!

Seriously, the only part of this post was deciding what to call this thing: Frittata? Egg Caserole? Southwest? Breakfast in a dish? Super Duper Egg Creation?


  • 6 eggs
  • 1 onion
  • 2 tomatoes
  • a bunch of green onions
  • 2 Tablespoons butter, melted
  • 1 cup milk 
  • 1 cup cheddar cheese 
  • garlic
  • salt and pepper to taste 
Optional: If you eat meat than you can add some bacon in it too. You can also add hot sauce or salsa to this to give it an extra kick!

Preheat your oven to 350°F.

Step 1: 

Chop up the onions, tomatoes, & garlic. (and bacon if you are using it)

Step 2: 

Beat the eggs. Mix in the milk and melted butter. Add all of your chopped onions, garlic, and tomatoes. Add salt and pepper to taste.

Step 3:

Pour the mixture into a greased casserole dish. Top with lots of grated cheese!

Step 4:

Pop that baby into the oven and cook uncovered at 350°F for 25 -35 minutes.

This recipe is also really easy to double or triple depending on how many people you're cooking for. Other things you could add into it: Hot sauce, Salsa, other types of cheese or other meats.
