Recipe: Caprese Skewers



Wondering what to cook for your next cocktail party? Don't cook anything! Just make these awesome little skewers in less than 5 minutes!

With an upcoming dinner party on the horizon and my growing addiction to basil, I knew it had to be easy to make and, obviously, include some delicious basil!

Not only are these healthy, veggie, and gluten-free, but they are sooo easy to make!

Ingredients: 

Cherry Tomatoes
Fresh Basil
Mozzarella
Balsamic Vinaigrette
A dash of Sea Salt

Step 1: Cut cherry tomatoes in half. Then cut mozzarella into pieces (about the size of a dime).


Step 2: Using a toothpick, skewer one side of the cherry tomato, add a slice of mozzarella, then a sprig of fresh basil, followed by the other side of the halved cherry tomato.



Step 3:  Place on a platter and sprinkle balsamic vinaigrette over all of the skewers. Toss on a dash of sea salt to taste.



See, that wasn't so hard!

  2. Yummy! Just need to get buffalo mozzarella (can't do cow products) and I'm in! I'll put those cherry tomatoes from my garden to good use soon!
