Recipe: Easy dinner



With summer pretty much here, the last thing most of us want to do is cook long messy meals in the kitchen when we could be playing outside instead. I wanted to share with you a quick, easy, and delicious meal that I make fairly often around these parts. 

You can always go to the way of tossing something on the BBQ, but since we don't have a BBQ, this is the next easiest thing. Also, since we love Indian food, this is a delectable option! It's not gourmet or anything, but it's flippin' delicious!

Easy Indian Dinner

Step 1: Gather up all your favorite veggies. There really isn't a way to mess this recipe up and when it comes to veggies you can pretty much use whichever ones you like. Here I chose mushrooms, broccoli, bell peppers, and tomatoes. Other veggies you could use include string beans, peas, leeks, or cauliflower. Once you picked all your veggies out, chop them up into bite-size pieces. 


Step 2: Chop up some onions and grill them in a frying pan with a little bit of oil. You could also throw in some chopped garlic. Yummm!



Step 3: Once your onions are nice and brown, then toss in all the veggies and grill them until they are all pretty well done. You could also toss in some meat if you want. Since we are vegetarians, sometimes I throw in some Tofu or Quorn chicken.


Step 4: At this point I pick out a delicious curry paste or some sort of yummy sauce. Pour it into the pan and cook the veggies in it until everything is piping hot. 

Step 5: Serve on a bed of rice (I prefer brown rice but white rice works as well) and enjoy!
